Cookie dough truffles

So as everyone knows, valentines day is coming up and, sweet jesus, what is a student to do after blowing all her money on christmas presents, but she has a boyfriend she wants to impress? Well I know both he and I love cookie dough and I remembered seeing this a little while ago and decided to make some! I found a safe-to-eat chocolate chip cookie dough recipe on Cupcake Project (I'll link it at the bottom). There should be quite a bit of leftover cookie dough, you can do with it what you will. I'm going to mix little bits of it with vanilla ice cream :)

you'll need:
(for the cookie dough)
2 cups all purpose flour
1/2 tsp salt
1 cup packed brown sugar
1/2 cup white sugar
3/4 cup unsalted butter, melted
1 tbsp vanilla extract
4 tbsp milk
as many mini chocolate chips as you want
(for the chocolate)
I chose milk and white chocolates to melt in different bowls, milk chocolate for covering it, and white chocolate for decorating
whatever decorations you want :)

1. mix all the cookie dough ingredients together in a bowl, that's it!
2. cover it and put it in the fridge for half an hour
3. cover a baking sheet with wax paper
4. pull the bowl out of the fridge and roll it into 3/4 inch (in diameter) balls, put them on the wax paper and then back in the fridge for another 45 minutes
  -all this waiting time would be great to make lunch, watch your favourite show, get some studying done, do laundry, etc...-
5. melt your chocolate(s) in a double boiler and pull your cookie pan out of the fridge
6. dip each ball in, make sure it's covered with chocolate and then take them out with a fork and put them back on the cookie sheet. before they cool down you should put any sprinkles/candies you want on them. if you want to decorate them with the white chocolate let it cool down first, do the white chocolate and then if you want put the candies on.
7. stick it in the fridge overnight just to be safe and voila!

Guacamole, how I make it

Ok so I would have taken a picture but I kind of ate all of it..

1 avocado
3/4 tsp salt
1/2 tsp garlic powder (plus another itty bitty sprinkle)
3/4 tsp lime juice
1/2 a plum tomato, diced
1 1/2 red onion, diced into little bits

1. cut your avocado in half, scoop it out of it's shell and throw the pit out. Mush it up in a bowl with a fork.
2. add your salt, lime juice and garlic powder in, mixing it enough to make sure that all the avocado has an equal amount
3. add your diced tomato and red pepper, gently mix it up
4. serve with nachos (maybe with melted cheese overtop?)! yum!

Cinnamon roll pancakes

Ok, so I don't know who the original is but I saw these on The Baker Chick, and they just looked so delicious I thought I should get the word even MORE out there!


Ingredients:

pancakes: (makes about 4/5 pancakes)
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 large egg beaten gentle
1 cup of buttermilk
1 tbsp canola oil

cinnimon filling (to swirl into the pancakes): *makes enough for much more than 4 pancakes
1/2 cup melted butter
1 tbsp ground cinnamon
3/4 cup brown sugar (packed)

cream cheese glaze: (this just makes the pancakes):

4 tbsp butter
2 oz cream cheese
3/4 cup powdered sugar
1/2 tsp vanilla extract

Preparation:
1. Mix all the dry ingredients together in a bowl, then stir in the wet ingredients until it's, well, batter. A few lumps are ok (actually, a few lumps are good. over worked flour is tough)
2. In another medium sized bowl mix your cinnamon filling ingredients together. Put the mixture in a squeeze bottle or pastry bag, either one should have a small tip
3. In the microwave heat up your butter and cream cheese. Mix them together until they're smooth and melted. (Mine worked, but Baker Chick's didn't, she just put it through a food processor and it was fine) Whisk in the powdered sugar and vanilla extract. Set it aside for later.
4. Warm up a frying pan on medium-low heat and spray on some cooking spray (or a little bit of butter, I like butter, personally). Scoop about 3/4 of pancake batter and pour it onto the pan (you know, like normal pancakes). Once it's cooked a little bit swirl your cinnamon mix into it. Wait until it starts to bubble on top and then flip it. Let this side cook for a little (1-2 minutes), put on an oven-safe plate and keep it warm in the oven until they're all done.
5. To serve, place a few on a plate and drizzle the cream cheese glaze over top. I enjoyed it with a few sliced strawberries, but that's just me :)

*I doubled the pancake recipe but NOT the cinnamon mixture recipe, since there's way more mixture than just enough for 4-5 pancakes.
