english muffin pizzas - sorry it's not that creative!

actually, any type of "round bread", so english muffins, bagels, flat bread, whatever are all good, but I'm going to be using english muffins.

So, first, gather all your ingredients. You can have whatever toppings you like, I'll just put down what I like (and what I made it with (aka what i had in my fridge)) :
2 english muffins, cut in half
a good sized 2 handfulls of whatever cheese you have, i mixed cheddar and mozzarella
pepperoni
1/2" by 1/2 inch peices of cut up prosciutto
thinly sliced mushrooms
thinly sliced tomato (the slices were cut into quarters)
pizza sauce (if you have it. i made pizza a few days before this, so I did, but i find that smooth spaghetti sauce works too)
oregano (just to sprinkle on top, it's not needed)

1. start toasting your english muffins, turn your broiler on medium (if you get a choice), get out a small cookie sheet and shred your cheese
2. Slice all your toppings
3. lightly coat your english muffins (which are now toasted) with sauce. you don't want too much or it will make it soggy, this is also why you toast it
4. put a good layer of cheese down, and lay down your toppings, then cover them with another layer of cheese. If you have prosciutto, mushrooms or tomatoes leave them on top of the cheese so they can crisp
5. sprinkle a little bit of oregano on the cheese, it looks nice and adds to the taste of the pizza or spaghetti sauce.
6. put it in the oven and watch it, mine took 7 minutes but it depends on the broiler temperature. just watch it to see when the cheese is melted and your toppings are crisp, if you have any on top.

take them out and let them sit for a minute to cool down, and enjoy :)
